Ingredients
  

  • 1 cup brown rice
  • 14 oz firm tofu
  • 2 tablespoons olive oil
  • 2 bell peppers sliced
  • 1 medium onion sliced
  • 2 carrots sliced
  • 2 cloves garlic minced
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or agave nectar
  • Salt and pepper to taste
  • Optional: sesame seeds green onions for garnish

Instructions
 

  • Cook the brown rice according to the package instructions.
  • While the rice is cooking, drain the tofu and press it to remove excess moisture. Cut into cubes.
  • Heat 1 tablespoon of the olive oil over medium-high heat in a large skillet or wok. Add the tofu cubes and cook until they’re golden on all sides. Remove the tofu and set it aside.
  • In the same pan, add another tablespoon of olive oil. Add the bell peppers, onion, and carrots, and stir-fry until the veggies are tender-crisp, about 5 minutes.
  • Add the minced garlic to the pan and cook for another 30 seconds.
  • In a small bowl, mix together the soy sauce, rice vinegar, and maple syrup or agave. Add this sauce to the pan, along with the tofu. Stir well to combine and cook for another 2 minutes until everything is heated through.
  • Season with salt and pepper, and add more soy sauce if needed.
  • Serve the tofu stir-fry over the cooked brown rice, garnished with sesame seeds and green onions, if desired.
